What do I need before using time & temperature?
Before using time & temperature, ensure you:
Set up your products and food handling processes on the Jolt web app.
Understand "target temperature," which is the required threshold food must reach within a specified time.
Understand "step duration," which is the time interval that food must be heated, cooled, or held at a specific temperature.
Know that foods can be assigned to different processes to prevent errors.
The two types of food safety methods:
Heat/cool method: Food must reach a target temperature within a specific time. If the target isn't met, the process will be flagged as "failed."
Hold method: Food must be held at a specific temperature for a set period. Measurements can be taken anytime during this period, but a temperature must be recorded near the end of the hold period during the "measurement window."
What is the purpose of time & temperature?
Time & temperature is designed to record temperature and time data, not to dictate food handling procedures. It helps you verify that food was managed according to your established processes.
3. How do I handle products if my customer has multiple departments set up in Jolt?
If departments are set up as locations and you don't want products mixed, enter products in location mode for each department.
Configuring food handling processes
How do I configure food handling processes in the Jolt web app?
Log in to the Jolt web app in content group mode, then navigate to the menu > time & temperature > food handling & processes.
How do I adjust a food handling process?
Click on a process to display its details.
The template will open, and you can adjust fields such as the target temperature and step duration.
Once you are done making changes, click update to save.
Can I copy, delete, or rename processes?
Yes, you can do this by clicking on the kebab menu (three vertical dots) to the right of the food handling process.
You can either make a copy of the process or delete the process. If you want to rename the process, click on the process to open the template then select the options tab. Make sure to click update when you are done.
How do I set available products for a process?
Click on the process you want to configure.
Navigate to the options tab and check the boxes for products to use with the process.
Click update to apply changes.
What is a measurement window in hold processes?
The measurement window is a time frame defined by allow measurement before and allow measurement after values. During this time, temperatures must be recorded.
Adding schedules to food handling processes
On the Jolt web app home page, navigate to the menu > time & temperature > food handling & processes.
Click on a process, navigate to the schedules tab, and click add schedule.
Fill out the required fields then click update in the right corner to apply changes.
