How to use the SmartSense probe

The SmartSense Probe offers temperature readings between -20 °C (-4 °F) and 100 °C (212 °F). Let’s review some best practices for probe usage.

The tip of the probe is sharp and sensitive to pressure. Do not apply too much force when inserting it into a food item.  Always use the probe with caution, carry the pointed end away from others, and store in a safe area. To prevent damage, ensure the probe is placed in an area where heavy items cannot land on it or bend it. 

Also, be aware of your surroundings when placing it near hot areas. The probe base can melt if it comes into contact with extreme heat. This will cause permanent damage and malfunction.

The probe is intended for food items only. If you are validating or calibrating the probe, you will place the probe in an ice bath, but this is the only divergence from typical usage.

SmartSense Probe Best Practices

When using the SmartSense probe, it’s important to insert the device into the most critical location for temperature measurement. The location varies with different products, typically the thickest or middle part of a food item. Measuring the most hazardous location ensures that the internal temperature reading is accurate and that food is cooked to the proper threshold.

When using the probe, the reading on the screen should stabilize before you record the temperature. This may take several seconds. We also recommend checking multiple food items per cooking batch for improved accuracy.

For hot bar/cold bar food items, check the top piece. Checking the coolest piece for hot items and the warmest piece for cold items ensures food safety compliance. 
 

Practices to Avoid

• When measuring hot food items such as meat or fish, make sure the probe isn’t touching bone or fat, as this will produce inaccurate readings
• When measuring hot holding or cooking temperatures, make sure the probe is not touching the heating element or pan.
• When measuring cold holding items on ice displays, make sure the probe isn’t touching ice
• Never measure hot or cold water when taking the temperature of a food item
• Make sure the probe isn’t measuring the air output in a cold case
• Do not insert the probe into frozen solid food items
• Do not falsify probe temperature readings – this can lead to fines or regulatory intervention
• Do not measure the temperature of one item, then log it as multiple items – this can lead to fines or regulatory intervention
